It's quite common for the initial blooms of many varieties (and in particular Dahlia) to look different from what you might expect.
This variation can happen due to several factors, whether it be soil type, nutrition, lighting conditions etc etc etc, but often the blooms will start to look more like their typical form after producing the first few blooms.
So, if your first flowers aren't what you anticipated, give them a little more time - they usually improve as the plant matures and produces more blooms.
